Chris mentioned that deamidated gluten is in red wine. How do we tell if it’s in a particular red wine, or is it in all red wines?

Dr. Amy Nett: This is a great question. Cyrex is where we got the information that deamidated gluten can be used as a clarifying agent in red wine. Beyond that, whether or not it’s in all red wines I’m not really sure. I did a quick Google search, and it looks like there are a few different clarifying agents that can be used for red wine, so I don’t think that deamidated gluten is used in all red wines. That said, I need to do a little more searching on the internet and/or talking with wineries because I’m not sure. I will try to do another consult with Cyrex and see if I can get more information on this, or if someone else knows the answer to this and can post it on the Facebook page, that would be fantastic so we can figure out how prominent deamidated gluten is in red wine.
