Chris Kresser: Yes. I do eat dairy. I ghee, butter, and full-fat organic and sometimes raw cream, and I eat a little bit of goat cheese. That’s what works for me. I can tolerate some cow cheeses as well in moderate amounts. I don’t do well with milk. I think I’m probably mildly lactose intolerant. I also consumer kefir, either homemade or a whole milk brand from the store. I think we talk about in the exposome module that only a third of the global population can digest lactose perfectly well, so lactase persistence continues into adulthood for those people. For others, all the dairy products that I mentioned just now are extremely low in lactose. If it’s only lactose that’s the problem rather than the protein, there would be no issue with eating some of these other dairy foods. I like the Ancient Organics ghee. It has a really nice caramelized flavor that I enjoy, and if I do coffee, I’ll have full-fat Straus cream with it, or I’ll sometimes have a more kind of like Bulletproof. I’ll typically have some grass-fed butter that we get from a farm in Oregon, or I’ll have that Ancient Organics ghee, and then I’ll have some MCT type of oil.
