Chris: You know, 100 percent is really important with people with severe gluten intolerance. In other situations, like what you mentioned, 100 percent is not essential I think. The difference between if someone was at like 97 percent and they experience not much of a difference, I think it’s pretty unlikely that doing it at 100 percent would make a big difference. I just don’t think that’s the way the body works. There’s some resilience built into the system, and if the person is so incredibly hypersensitive even like a 1 or 2 percent variation would make a big difference, then the problem there is not eating those things. It’s whatever is driving that extreme hypersensitivity, and that will need to be addressed, I think, rather than just being extremely rigid and strict.
