If a food manufacturer is using ‘meat glue,’ i.e., transglutaminase, how is this labeled on ingredients?

Dr. Amy Nett: Great question. I don’t think it’s always labeled, so you have to be aware of the types of products it may be in. I think Chris mentioned a couple of these, including imitation crab and chicken nuggets. I think, to some extent, you have to really just be aware, and that’s why when we do a Paleo reset diet and are asking patients to be pretty strict about their diet, we really try to suggest they just avoid processed and packaged foods as much as possible because things can certainly be hiding in there.
